What is fermentation?
Fermentation refers to the growth of micro organisms (such as lactic acid bacteria) on foods. It was accidentally discovered as the ideal storage technique. Since then we have developed different storage methods, but traditionally fermented foods are once again gaining popularity because they are so healthy. Fermented foods are also easy to digest. Lactic acid bacteria develop enzymes that digest the food and turn it into easily absorbed nutrients.
A combination of fermented beetroot and natto
The main ingredient of CressanBeta is fermented beetroot. Beet juice is fermented by lactic acid bacteria into a healthy drink with tasty red pigments. After the fermentation process Cressana®’s healthy drink undergoes a cold freeze-drying process, a mild method that retains the lactic acid bacteria. Natto is a traditional Japanese dish that is made with fermented cooked soybeans. The beneficial food bacterium Bacillus subtilis natto is responsible for the fermentation. Natto has been consumed for over a thousand years in Japan and it is mainly a traditional dish of the eastern Kantō region.
Papaya and pineapple, favourite desserts
